Cane was flumed down the bluff to the mill from fields as far as four miles away. An excellent landing for interisland ships was one of the advantages of the site. In 1882, a severe storm badly damaged the new mill, causing part of the bluff to fall into the factory. The mill was repaired and sugar continued to be manufactured there until 1890.

In my opinion, and you know what they say opinions are like Chattanooga was a plow company first and foremost. I find it hard to believe that they would decorate up an implement, which is what cane mills were, an implement to crush and squeeze the juice from a stalk of sugar or sorghum cane. These mills were produced for function, not decoration.

The best improvement we made was adding a 500 gallon preheating tank with a propane boiler. We preheat 300 gallons of juice down to 100 gals. of concentrated juice. All the separation occurs in the preheating tank, which leaves approximately 2 hrs. of cooking in a stainless batch pan. We then bottle the pure syrup in 12oz bottles.
