I have the Crankandstein 328D that I built a stand for to hold a 20 gallon bucket below and a hopper to hold about 60# and coupled it to a 1/2hp electric motor that I had laying around via a 12" and 2" v-belt pulley. Loosen one screw and remove the hand crank, and tighten on your drill chuck. The gap is adjustable, at both ends of the rollers for parallel adjustment, from 0.005 to 0.070. Loosen to screws slightly, and turn adjustment knobs, then retighten. There aren't detents, but a feeler guage lets you measure the gap without much difficulty.

As far as mill goes i have just upgraded mine and i would heartily recommend buying from mashmaster. As far as i know this is the only fully adjustable geared roller available for home brewers. Usually it's one or the other. It's a great bit of gear but takes a bit of driving. I bought one of these and used a spider coupling. Home Brewer Special!

Holds just over 5kg of grain and you just need to make an adapter to connect it to your mill. I used a piece of 100mm PVC pipe with a shaped piece of MDF inside it to direct the grain in the right direction. It isn't just, or even primarily, the cocoa solids that are getting refined down. It is the sugar and milk powder. Let's get away from 'fine'. The sugar and any other solids in chocolate are in the 10-15 micron range. That is 1/100 of a millimeter. In contrast, granular sugar is somewhere around 500 um ( microns).

You start by cutting a scrap piece of 2x4 to fit in the bucket and notch it to mount the Corona. It sits "down" in the bucket so the very top of the mill (with hopper removed) is sitting about 3/4 inch or so under the very top and is screwed in place through the bucket into the 2x4 using drywall screws.

Aside from no knowledge base, all the equipment was industrial. There were no melangers. The cheapest winnower was $2000 and did a huge 2 oz a minute. There were no roasters. A basic set up would have cost you $100,000 or more. Now a good setup is $1000. That is two orders of magnitude. Please keep that in mind is all I'm saying.

Maybe not as compact as you'd like, but it's been working well for years. The hopper comes off with three bolts, but I've never taken it off. That's a 10gal brute under it for scale... so not too big. I recommend going with a gearmotor over a sheave system. Safer and more compact. Think I've fit near 40lb of grain in the hopper.

It takes me about 30mins to mill ~165lbs of grain. I don't know my efficiency yet because I got some dough balls last time I used it so I think I can push it higher. The mill was about $300, motor another $300, $200 of parts, and a whole weekend to build the frame.

I would not bother mounting to a bucket lid. Although It may work, those lids are kinda flimsy, and it would probably bust over time. You would still need a hopper of some sort. Doug
